A light mousse perfectly balanced with LE FRUIT DE LA PASSION.

Step 1
Soften the gelatin sheets in a bowl of cold water for a few minutes. Set aside.

Pour LE FRUIT DE LA PASSION, 30g sugar and the egg yolk into a saucepan. Bring to the boil over very low heat and stir continuously with a wooden spatula for 2min.

Add the drained gelatine and the liquid cream. Whisk constantly, then remove from the heat. Set aside

Beat the egg whites with the remaining sugar with an electric mixer.

Gently add the egg white foam to the passion fruit mixture, being careful to maintain its consistency, then lift the mixture to fold it in homogeneously.

Pour the mousse into individual ramekins and place in the fridge for at least 4 hours (ideally overnight) to allow the mousse to set.

Serve this mousse with shortbread.
