This Chocolate and Passion Fruit fondant combines the intensity of dark chocolate with the exotic freshness of passion fruit for a gourmet, comforting dessert.

Step 1
Melt the white chocolate over a pan of hot water and incorporate the cream and LE FRUIT DE LA PASSION . Mix, allow to cool, pour into an ice cube tray and leave to set for 4 hours in the freezer.

Preheat the oven to 180°C. Butter and flour 6 small ramekins with a diameter of 6 cm.

Melt the dark chocolate over a pan of hot water. Stir in the butter in pieces. Set aside.

Whisk the eggs with the sugar in a bowl.

Stir in the melted chocolate, then the flour. Once the mixture is homogeneous, divide it between the moulds.

Place one of the ice cubes in the centre of each one.

Bake for 10 to 12 minutes. After removing from the oven, unmould each fondant onto serving plates (be careful, this is a tricky operation). Serve immediately.
