Skewered chicken marinated in our ginger concentrate


  • 6 chicken breasts
  • 1 large red bell pepper, chopped
  • 3 lemons
  • For the marinade :
  • 10cl olive oil
  • 8cl lemon juice
  • 2 tbsp chopped coriander
  • Zest of a lemon
  • 1 tsp ground black Kampot pepper
  • 1 tsp Zaatar spice blend

  • Step 1

    Dice the chicken breasts and place in a shallow dish. Sprinkle with salt and pepper.

  • Step 2

    In a bowl, combine olive oil, lemon juice,LE GINGEMBRE, chopped coriander, lemon zest and Zaatar spice. Drizzle over the chicken. Mix well. Cover with cling film and store in the fridge for around 3 hours. Stir occasionally.

  • Step 3

    Preheat the oven to 200°C. Remove the oven rack from the oven and line it with baking paper, positioning it under the grill.

  • Step 4

    Cut the 3 lemons in half lengthways, then in 4 from top to bottom to create 16 triangles.

  • Step 5

    Garnish four skewers with alternating layers of chicken, red pepper and lemon.

  • Step 6

    Grill the skewers for approximately 15-20 minutes, turning and basting regularly with the marinade.
