Step 1
The day before, split the vanilla pod in half and reserve the seeds and empty pods in a pipette with the olive oil.

Preheat oven to 170°C. Meanwhile, lightly crush the hazelnuts. Once the oven has reached temperature, place the hazelnuts in the oven for 8 minutes. Set aside.

Remove the bones and pare the sea bream.

In a blender, blend the watermelon, cucumber, chilli, garlic and maple syrup with LE FRUIT DE LA PASSION Concentrate. Add salt and pepper to taste.

Using a sharp knife, arrange thin strips of sea bream on a flat plate. Brush with vanilla olive oil and fleur de sel. Garnish with hazelnuts and herbs of your choice (coriander or parsley). Pour the watermelon mixture around the fish and drizzle with vanilla oil.
