Step 1
Peel the mango and chop it into brunoise. Mince half the red onion and the chilli. Finely chop the coriander. Place together in a large bowl.

Mix the olive oil with the balsamic vinegar, LE GINGEMBRE and lime juice. Season with salt and pepper.

Pour the mixture over the ingredients in the bowl, cover with cling film and leave to chill in the refrigerator for 30 minutes so that the flavours mix.

Using a sharp knife, thinly slice the fish and arrange on a serving platter. Season lightly with fine salt. Add the sauce and leave to marinate for a few minutes before serving.
