Passion Fruit Ice Cream

  • 15cl LE FRUIT DE LA PASSION
  • 20cl milk
  • 25cl whipping cream
  • 4 egg yolks
  • 110g sugar
  • 1 lemon juice

Preparation

  • Step 1

    In a bowl, whisk the egg yolks with the sugar until the mixture whitens.

  • Step 2

    Add the lemon juice and LE FRUIT DE LA PASSION. Mix well.

  • Step 3

    Add the milk and cream and mix again.

  • Step 4

    Pour into a saucepan and cook over a low heat until the mixture thickens and coats the spoon. Pour the mixture into a container with a spout and store in the fridge overnight.

  • Step 5

    The next day: assemble the elements in an ice cream maker. Set to speed 1. Gently pour the mixture into the bowl of the ice cream maker.

    Leave it to churn for at least 15 minutes. 

  • Step 6

    After churning, switch the ice cream maker off. Pour the ice cream into an ice cream tub and store in the freezer.
